Yup, oreo muffins (: I modified the recipe (as usual) and sprinkled crushed oreos on the top because I thought they looked nicer that way. And it was a recipe for vegan muffins but I honestly don't quite care for being vegan so I used regular milk and regular oreos.
And because oreo cookies remind me of Cookie Monster from Sesame Street ...
My family (including myself) is becoming fat, thanks to me and my baking addiction which hasn't yet died down! And we (including myself) all thought I was merely going through a passing phase. Haha.
Oh yes, and:
This was obtained from accidentally stabbing myself with a satay stick (which I used to test if the muffins were cooked) so violently that the satay stick remained stuck in my finger even after I let go. The area around the little hole turned grey immediately and if I had died, my tombstone would have included something like "death by muffin poisoning".
Recipe: Oreo Muffins, as requested by yasmin (:
(Makes 18 small ones or 12 regular)
Ingredients:
1 cup flour
1/3 cup unsweetened cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 cup milk (for vegan, use soy)
1 tsp white vinegar
2/3 cup sugar
1/3 cup canola oil
1 1/2 tsp vanilla extract
12 oreos, coarsely chopped (for vegan, use vegan cookies!)
Directions:
1. Preheat oven to 350 degrees F.
2. Sift flour, cocoa, baking soda, baking powder, salt.
3. Whisk milk and vinegar, set aside for a few minutes. (I think this is a vegan substitution for buttermilk if I'm not wrong!) Add sugar, oil, vanilla and beat till foamy.
4. Add dry ingredients and mix. Add chopped oreos, stirring just to combine.
5. Spoon batter into cups, filling 3/4 full. Bake for 18-20 min.
Yup, I did cut down on the sugar. Chop the oreos with a sharp knife instead of crushing them and you'll get nice chunks. And what I did was to stir in half of the oreos into the batter, and sprinkle the other half on top (as you can see in the photos). They're best eaten fresh because the oreos tend to get soggy and lao hong! :D
